Who we help

EXCEED works with hotel owners, operators and asset managers, restaurant and bar operators, leisure businesses, and the company directors and investors behind them. Some come to us to move a good operation to exceptional. Others own or run an underperforming — even failing — hotel or restaurant where the product is sound but reviews, repeat business and revenue are slipping, and all it needs is the right help.

We also work with decision makers inside hotel groups and restaurant chains who want their businesses independently assessed for quality and efficiency — property by property, against one consistent standard.

In every case the approach is the same: an independent, confidential assessment of what your guests actually experience, a practical plan, hands-on training — and a verified, measurable result.

And because service is universal, so are we: EXCEED works worldwide, from the UK, France and Germany to Dubai, Thailand, Australia, California, Mexico and Chile — wherever your business welcomes guests.

Founding Director

Rodney Bishop

Standards · Guest experience · Commercial leadership

Rodney's career began at McDonald's, where he learned the importance of health and safety, food safety, operational discipline and the ease with which clear standards can be implemented across any type of business. That early experience established a principle that continues to shape EXCEED: exceptional performance is created through simple, measurable standards that teams can understand and repeat.

He trained in Front Office operations at The White Elephant Resort in Nantucket before progressing into fine-dining service as a Maître d', and later completed intensive cross-department management training at Gleneagles Hotel and Golf Resort, Scotland. His international experience includes NBC Television, hospitality operations connected with the Sydney 2000 Olympic Games, the Athens 2004 Olympic Opening and Closing Ceremonies, and food and beverage operations at Twickenham.

Operations · Multi-site performance · Commercial delivery

David brings approximately thirty-five years of operational leadership across restaurants, bars, pubs, leisure and nationally recognised hospitality brands. He has spent many years directly running and operating high-street bars and restaurants, giving him a practical understanding of guest expectations, staffing, service delivery, margin control, compliance and consistently busy trading environments.

His wider career includes senior roles with Haven, Crafted Pubs, Zizzi, Jamie Oliver Restaurants, Five Guys and Bootlegger Bars. David's experience enables EXCEED to test recommendations against the practical demands of implementation at scale.

06Industries

Different environments. The same pursuit of excellence.

EXCEED adapts its standards and review methods to the realities of each customer-facing operation.

Tailored, never generic.

A five-star hotel, a stadium, a members' club and a holiday park do not need identical procedures. They do need the same clarity: what good looks like, who owns it and how it is verified.

Our principles also serve boutique hotels, golf & country clubs, holiday & caravan parks, serviced apartments, short-stay portfolios, retail hospitality, healthcare and care environments, corporate dining, universities, wedding venues and conference centres — wherever guests are welcomed, worldwide.

Sector · Luxury hotel

A five-star building delivering a four-star operation.

An independent operational review identified failings across arrival, front office, public-area cleanliness, breakfast, pools, bar operations, maintenance response and management visibility.

The output was a prioritised improvement plan, department standards, leadership actions and a verification structure designed to lift consistency without changing the physical product.

  • Full guest-journey mapping
  • Photographic operational evidence
  • Immediate and strategic actions
  • Management accountability

Sector · Restaurant

Good food undermined by uneven service.

The operation had strong product but inconsistent welcome, weak table ownership, missed upselling opportunities and poor service recovery.

EXCEED introduced clear service sequences, briefing routines, sales prompts and management floor controls.

  • Reservation-to-farewell standards
  • Upselling and product confidence
  • Guest complaint handling
  • Shift review measures

Sector · Multi-department leisure

One guest, several disconnected departments.

A leisure operation needed one common standard across reception, accommodation, food, leisure and guest services.

The solution created shared measures, department checklists and a management review rhythm that made handovers and accountability visible.
