A confidential conversation with a founding director.
Speak with EXCEEDBringing together many years of experience, knowledge and understanding of the hospitality, catering and institutional industry, three very old friends bring their experience together to deliver the EXCEED standard.
Rodney’s career began at McDonald’s, where he learned the importance of health and safety, food safety, operational discipline and the ease with which clear standards can be implemented across any type of business. That early experience established a principle that continues to shape EXCEED: exceptional performance is created through simple, measurable standards that teams can understand and repeat.
He trained in Front Office operations at The White Elephant Resort in Nantucket before progressing into fine-dining service as a Maître d’. He later completed intensive cross-department management training at Gleneagles.
Rodney’s international experience includes NBC Television and hospitality operations connected with the Sydney 2000 Olympic Games, the Athens 2004 Olympic Opening and Closing Ceremonies, and food and beverage operations at Twickenham.
William has approximately thirty-five years’ experience in five-star hospitality operations across the United Kingdom and Europe. A graduate of École hôtelière de Lausanne, his career includes senior operational and food-and-beverage experience at Gleneagles, Heathcotes, The Belfry, The Eden Club and other distinguished hospitality businesses.
His expertise combines luxury service, restaurant and hotel operations, food and beverage leadership, operational standards and the development of hospitality talent.
William founded Apprenticeship in Hospitality Scotland, an award-winning industry-led programme launched during the 2014 Ryder Cup at Gleneagles.
David brings approximately thirty-five years of operational leadership across restaurants, bars, pubs, leisure and nationally recognised hospitality brands. He has spent many years directly running and operating high-street bars and restaurants, giving him a practical understanding of guest expectations, staffing, service delivery, margin control, compliance and consistently busy trading environments.
His wider career includes senior roles with Haven, Crafted Pubs, Zizzi, Jamie Oliver Restaurants, Five Guys and Bootlegger Bars.
David’s experience enables EXCEED to test recommendations against the practical demands of implementation at scale.
If you are experienced, well travelled and have an eye for detail, we would like to hear from you. Not a CV — we would rather read your own words. Six questions, no word limit, and no right answer.
Please do not send a CV. There is no upload on this page and nothing to attach.
The guest’s eye never rests.
Photography · EXCEED directors, on locationBeyond their operational careers, Rodney and David have travelled extensively around the world — Europe, the Middle East, Asia-Pacific and the Americas — staying, deliberately, at every level of the market: Airbnb apartments, independent guest houses, three-star and four-star properties, five-star hotels and six-star resorts.
That breadth matters. It means EXCEED judges your operation against the standard your guests actually carry in their heads — formed by every stay they have ever had — not against a theory. We know what delights at every price point, what disappoints at every star level, and exactly where your property sits in your guest’s private ranking.
Every tier teaches something different about what guests value. We bring all of it to your property.
“The guest should not need to understand your operation. They should simply feel that everything works.”Rodney Bishop · Founding Director, EXCEED Hospitality
